The Colors of an Exceptional Cooking Class Cocina

To experience this glorious morning, on the open patio of a tiny commercial kitchen, in an otherwise residential neighborhood paralleling the river Cuale, in the very foodie coastal city of  Puerto Vallarta, is a treat beyond measure—but I will try to share. I will attempt to take you to this special place full of unselfconscious art and function.

The cobblestone streets are dusty and send fine particulates of powder into the atmosphere causing a fairy-dust-like twinkle in the bright morning light. We bump along in a taxi turning and curving along the circuitous route that surely would lead most to believe what they say—that “this place is so hard to find, it has to be good!!!”

The front is shut and  obviously closed for  business. The taxi driver brings this to our attention, “is closed” he says simply— assuming that he will be continuing along the bumpy calle along the rio back to the bustling scene of the awakening city and return us to our point of earlier departure. PA15821103517

“No,” we tell him “we’re taking a cooking class” “leciones en la cocina” we attempt to convey and with that he beams a broad smile and says “really?” and stops the cab along the wrong side against the opposing traffic on the little street in front of the café.

We notice Lola peeking through the door at us as she unlatches the locks motioning us through and welcoming us as we enter the quiet little checkerboard floored dining room. 20140125_204143At night this place buzzes with animated conversations and is alive with color and funky memorabilia, art and posters, collages of collectibles all on brilliantly painted walls creating an eclectic artistic interior of fun and festivity. But on this morning, the room is dormant save the three other guests waiting to participate in the morning’s class.

After brief introductions we are escorted through a doorway to a narrow concrete staircase. P1120475 To the right we realize that the rest of the space is undercover, yet always exposed to the elements from that one open east-facing orientation.

Inasmuch as I love cooking and eating and all things related to culinary pleasures, this is not the focus of this story, but rather, it is to describe this artfully inspired space and all the raw style and primitive grace we encounter in this wonderfully entertaining class of good and indigenous fresh foods and their fabulous flavors.

The space is charming and intimate and spotless. The colors are screaming from every direction including  a whimsical pink door surround seen over the wall of the patio. P1120522 The surrounding area is quite run-down and depressed, yet this jewel of a creative kitchen space shines boldly amidst the  impoverished surrounds. P1120524

The sky is perfect blue and sharply contrasts against the wavy pink paints dividing between pale and happy bubble gum of the stucco wall. A functioning drain-pipe of clean white PVC bisects the wall beneath which is a profusely blooming rose-colored azalea in a clay pot. P1120523

Panning into the covered portion of the space, the radiant coral color wall wraps to the back and transitions with gracefully wavy detail to a paint remarkably resembling the sky blue—of the actual sky—that we encountered out front which slams into a dazzling yellow-gold wall half painted and half tiled with the same luminous yellow color. And I have only described the backdrop!

 

Against these boldly painted and tiled walls are layers of other things that add even more dimension and interest to the kitchen. Blue and white tableware, glazed clay vessels, and a mysteriously faded poster of Frida Kahlo. More of the sky-like blue is hanging in the form of various sized and shaped enamel cooking pots on the coral wall.

It seems from the murmurs coming from the eager students that this enchanting environment represents the promise of a flavorful feast of color and texture. The food matches the interior. The stuffing for the dark rich green roasted poblano peppers is a colorful collection of shredded carrots, red cabbage, zucchini, tomatoes, raisins and pine nuts creating a seemingly woven fabric of colors and texture. P1120491

Myriad handmade condiment dishes and traditional serving pieces contribute to the collection of color we are experiencing in this spectacular sensory bombardment. And I mean that in a really good way. The intensity of the colors and layering, the structure and accessories right down to the food and its presentation results in an artistic expression that goes way beyond the sterile experience often connected with the laboratory of a commercial cooking experience.

 

So we say—why be status quo when you can be individually fabulous, cooking and creating in an unconventional environment that reflects the animation and joy of the flavors that comprise the artful meals?! Thank you Lola for imagining and realizing the Red Cabbage and bringing so many artful, entertaining years and delicious meals to the community of fortunate residents and happy visitors—happy that they were able to find the place!P1120530

 

 

Discovering Design Dangling Three Dimensionally in Space at the Estudio Cafe

They hung from the exposed structure of the portico that ran the length of the house over-looking the marina and the tropical glistening scene that surrounded the estudio-cafe. Gently twirling blades of colorful aluminum balanced and counter-balanced on wire and suspended from nearly invisible filament. Petals of flowers, leaves, triangles, they dangled and spun in the gentle movement of air. What local artist created such magical sculptures that added such color and dimension to the various heights of space both inside and out ? I must find this fanciful person.P1040400
I discovered he was not a local, rather a visitor del norte. Yes, an American snow-bird escaping the chilly climes and bringing his art, as he vacationed in the southern resort of Puerto Vallarta, for others to share. There was a kismet, a chemistry between the two men, the host and the new-comer. Both teeming with artistic juices looking for challenging means of expression in a variety of media. The host was more than willing to share his space to exhibit these delicate yet powerful pieces. The new-comer when describing his work references “poetic spaces and meaningful places” and nothing could better describe where he found himself and his new venue, the estudio-cafe.20140118_125532
Having enjoyed for years the magic of the estudio-cafe with it’s perfect waterside setting and continuous collection of artists presenting exquisite musical talent and fine art of all manner, engaging conversation in an ever stimulating artistic dynamic, it was this day with the sun-bathed ochre stucco walls and shadows cast by the progression of the day with soft breezes wafting through the architecture, that I was moved once again by the composition of it all.
A three-dimensional collage of color and style, form and scale, art both created and spontaneous – an unselfconscious collection of rare confluence that cannot be created – but happens. This is an incredible experience. And it was with this overwhelming experience that first introduced us to our host and has since brought so many fascinating people into our lives.20140125_131409
This was the beginning of the friendship, spawned by the love of art, related color and shapes, that brought Terry Welker’s work to New Mexico. The Thrill of Continuing Education Santa Fe Style!

Continuing Education – it can either send a signal of dismal obligation or the promise of an exciting new territory of learning in a field about which you are already interested. Today the latter was surely the case. The obligatory CEU’s required to maintain/renew state licenses in Interior Design sneak up every year about this time.

I started out for Santa Fe, a direct 50 minute ride north, up the freeway. The traffic has started to gather at 6:45. It’s funny how when you do not customarily hit the road at that hour that you discover that so many others do! As the sun peeked intermittently over the mountain and the terrain dipped and rose to the east, the glow back-lit the charcoal-blue undulating peaks and burst forth blindingly as the landscape flattened to grassy fields of the high desert. Once up, it is invigorating to see the sunrise and be on the road starting off on an early day – it’s the getting up that is the struggle!

The class was scheduled to start at 8:00 and  I had started out at 7:05 – cutting it a little close with no contingency for delays. The freeway was a ribbon of fast moving cars, marked for 75, most were zipping along at 84 – I included. As I entered the city limits and navigated the exit winding my way along the curving streets past golden chamisa and sun-baked adobes, clusters of lanky black-eyed susans and residues of old-fashioned hollyhock stalks punctuated with tired pink blossoms

leftover from the mid-summer floral explosions so fabulous in the cooler mountain air that is Santa Fe. Descending into the “City Different,” I wanted to enjoy the scene but was pressed for time.

Scooting around the corner and climbing up the sloped street in front of the La Fonda toward the Plaza, I turned right only to find that – as I had expected – the parking lot in the hotel was full. More minutes spent turning right again in front of the majestic Cathedral Basilica of St. Francis of Assisi,

I screamed into the other open lot, paid for the day and raced on foot, in my new sensible Tom’s flats, along the sidewalk back to La Fonda. The doorman proudly held the door open with a smile and I dashed inside just as the towering church bells rang 8 o’clock. Whew…I swiftly crossed the busy lobby of eclectic travelers and made my way to the private room in which the class had assembled – in the nick of time. I grabbed a coffee, signed the sheet and took my seat at the front of the room and began a day of total immersion into the world of wood, concrete, cork,20150925_103843 leather and composite materials such as terrazzo and engineered stone.

Inasmuch as one might not find this terribly stimulating, the instructor, Fred Jackson, was animated, enthusiastic and extremely well informed. He fielded numerous questions without a hitch, had excellent presentation materials, hand-outs and visual aids. It was informative, interactive, illuminating and fascinating. It was creatively inspiring and helpful. After 8 hours, I feel that I know so much – so very much about the characteristics, applications, strengths and weaknesses, sustainability, fragility and renewable and recyclable resources of all of these various natural and manipulated materials that I am now well armed and quite dangerous.

Creating a Good time is an ART!

Let’s make guaca20150120_113147mole! Creating a good time—is an art. And as is true with most artistic ventures—as in life in general—some people do it better than others. Enthusiasm is infectious and it generates such greatness from its energy that is should be harnessed. It is about this that I write today.

So hearing the charge “Let’s make guacamole!” will be for some a really exciting, if not challenging opportunity, while to others it will suggest a rudimentary task  and prompt eye-rolling. Those with a lack of enthusiasm or optimism, that everything can be fun with the right recipe, will be the

eye-rollers thinking—what’s the challenge of making guacamole? Having done that a million times and regarding its mastery as already accomplished, will not look forward to such an opportunity.

It’s like all enthusiasm, the glass half empty or half full…and with that let me share with you a cooking class that was such fun that is warranted this blog. Despite the fact that the setting was in a tropical jungle, there were many options that day for activities that would blow your paradise-seeking mind. And with all those incredible options I was having great difficulty making decisions each of which eliminated one over the other.

Otherwise probably not to keen on the idea, but having been romanced by the paella lesson left to simmer on the open grill, I had half an open mind about the seemingly simple offer of a guacamole class.

So with a small herd of turtles in front of and behind me, we climbed the stone steps that wound through the lush green vegetation. Barefoot and still in my wet-suit from an educational and invigorating morning snorkel,  I wondered if I should be returning to the beach or investing the precious time in the seemingly rudimentary guacamole class.

My reward was at the top of the hill…a statuesque chef donning his attenuated white hat graciously greeted us—welcoming us into a beautiful open-air palapa with its bony wooden structure beneath the layered palm thatch ceiling. There before us was a long rustic banquet table beautifully dressed with multiple molcajete vessels of various sizes filled with dark ripe round avocados, blackened/roasted plum tomatoes, grilled onions, blistered serrano chiles,  freshly cut limes, red ripe plum tomatoes, fresh serranos, bunches of aromatic cilantro and pristinely peeled white onions.

At the point of arrival, a bounty of various  specimen chiles were presented on a large rust-colored clay barro platter and stacks of  little barroware plates were in piles interspersed among the molcajete.

Giant steel stars pierced to allow twinkling light to dance at night painted turquoise for pop in the daytime hung at staggered heights from the center of the grand, voluminous palapa. Surrounded by verdant jungle and colorfully painted concrete walls, the room was expansive yet intimate. The chef in his starched white uniform embroidered with his name and proud logo of the establishment greeted us in his towering hat and welcomed us into this scene that dazzled the eye.

Guacamole I’m thinking…this looks like a bit more fun than merely mashing up some avocados!!! And with that he began his friendly introduction to the fiery cuisine of Mexico’s flavorful salsas! Presenting the platter of chiles he held each up for all to see asking the group if anyone could identify them. The replies came from all around “serrano, jalapeno, chipotle, banana, arbol—cola de rata, poblano, guajillo…” The rapt audience sat encircling the grand buffet on rustic wooden stools engaging in lively conversation as the chef spoke in his open and encouraging manner describing each of the chiles and their many uses.

Now we were invited to approach the table where spaced evenly along each long side were stacks of white linen—pressed aprons and chef’s hats for each one of us—how fun and what a nice addition to the otherwise casual scene. We donned our outfits with giggles and proceeded to admire each other’s instant transformation into the appearance of proper culinary participants!

The chef alternated each pair across the table from one another assigning guacamole for one pair and salsa molcajete for the next and so one down the line. This too produced camaraderie between strangers who at once bonded in the fun of the festivities. Oh, and did I mention that for those who chose to partake that delightful beverages were served of all manner of tropical delights from straight tequila shots to refreshingly poured on the rocks with lime to jaca, papaya, pineapple juices, and rum? All this as the chef assigned tasks for each around the table resulting in a chatter of conversation and progress reports as each  tackled their portion of the process—dicing, mashing, mixing and squeezing. The action continued to unfold as the capable woman behind the counter made fresh corn tortillas and delivered them oozing with molten Oaxaca cheese—quesadillas ready to scoop up the magnificent fresh salsa and guacamole!! Smiles and groans of delight emanated from around the room.

So in summary…the recipe for creating a good time: Presentation, welcoming attitude, disarming  graciousness, with the best representations/samples of the product around which the good time is based! Know your theme/subject and make it fun!

Save the Craftsmen from Extinction (Lest we be reliant on other countries to fabricate our dreams.)

While innovative highways channel thinkers racing in an infinite world of hi-tech competition and dizzying speed – who will build these innovations? Just read an interesting article and it spurred thoughts around an old subject about which I have passionately expressed urgency in the past. A subject addressing our preoccupation and emphasis on hi-tech advancements at the expense of, rather than in concert with, the trades.  Let’s examine why the following might be applicable in every community where intellectual design creatively and successfully melds with tangible old-style craftsmanship.  INTERNATIONAL NEWS FLASH from Istanbul – Kerem Alper – whose brain works on both sides of the fence holds dual Masters from Stanford in both design and business. Alper obvserves, “We’re seeing a hybrid world where digital and physical design collide, which could be called “physical computing” or “embodied systems” or, as we say, “sensitive products” (because “smart” implies only the left side of the brain) but it all hints at: If you’re doing an app or a website, what is the physical counterpart of this? Partner with dual degrees also from Stanford in architectural design and structural engineering, Paired with a degree from NYU in media arts Engin Ayaz, address why Istanbul is ripe for collaboration between the high tech intellectual design and hands-on design fabrication: “One factor is convenience. We can work closely with craftsmen and makers here; they still reside in central areas of city and they have a lot of know-how in the techniques of making. They are the last generation of their kind, so we treat them as precious collaborators for our projects. IMPORTANT lesson for all listening: to nurture a partnership between the trades and the fast-pace of the innovations of our technological world with all productive members of our society – emphasizing each ones strengths and contributions and cultivate expertise and pride in all work. Lest we be reliant on other countries to fabricate our dreams.

A True Beach House…

The soft diaphanous salt air wafts through the open concept of this simple yet effective architectural design – would that it had gauze draping the sides to illustrate the motion of the ever so soft breeze. Thatch top still green from the recent construction, sturdy crooked legs like that of the broken men who braved the seas and might have found themselves beached here to build this primitive, yet artistic structure. It was picture perfectly inspired dwelling on this glorious tropical day.

Here we are lolly-gagging along…shelling, exercising, making our way across this pristine stretch of fine sand exaggerated in girth by the low tide that allows the seemingly unrestrained beach to read with expanded proportions when we come upon this precious little structure.

What a find! When you least expect it, you often encounter the best opportunities – like this one – strolling down the beach and encountering this creative little casita – beachfront for sure – organic, open and airy!!! Surfers? Nomads? The possible stories of our imagination are limitless within the physical parameters of this delightful discovery.

The roof allows filtered light in and open sides allow the sea breeze to flow through…organic material used to create these authentic and so very contextual furnishings speak volumes about the focus of the fabricators. Nestled against the out-cropping of jungle trees and wild flowers spilling onto the sand, the scene is more magical than Gilligan’s – maybe even more so that Robinson Crusoe!!  Tom Hanks would have thought he had stumbled into the Ritz! Yet, the simplicity of it all was the emphasis of less is more – spare and understated – it pared down the essential elements to create this special little one room accommodation.

The furnishings are minimalist – yet so very functional. The sofa is crafted from a log supported, and suspended above the beach sand – quite comfortable and ergonomic as a seat structure. A triad coffee table is comprised from three logs topped with three handsome flat stones. Perfect!  And a sculptural,  beautiful branch of driftwood sits off to the side reminding us that beauty without function is essential.

Take a walk in the woods…of into the fields…onto a wild untamed beach and discover the natural elements that were the primitive beginnings of our interior design – the modified native habitats that we reside in today. And see that stretch!!!!! Evolution can reverse its course as we investigate and appreciate the value and beauty in simple things…

Mad About Mosaics!

When in doubt – go for the gusto!  The easy options were just that – too easy and after envisioning all of the obvious options it hit me. I adore color and texture and the varied effects of bits and pieces making a whole. Fragmenting and reconstructing, creating and melding, mixing and matching…mosaic is magnificent. Taking disparate shards and creating a scene, combining a collage of materials and making a mosaic of their complimentary shapes and textures.

Architecturally, walls are faced with murals of mosaics on grand scales that pull the public eye into fantasies of fine, fragmented details.

Inspired for years with this colorful, playful and loose art form, I recently attacked my fireplace surround. Why not break convention from the traditional use of material such as tile, stone, perhaps glass and use ALL of these materials in a bold collage of color and make a statement that lasts!

Mostly broken tiles from a variety of sources along with simple glass stones, broken ceramics, and even treasured polished Atlantic beach stones that my father collected and took to the glossy, glassy high polish of his tumbler that spun in the garage day and night with the different frits to gradually transform the smooth pebbles into those highly polished prizes. This sort of project can be an intensely personal collection of fragments and memories.

The Art of Collage as Architectural Motifs

Pat Forbes builds layered paper collage for her series Architectural Motifs.

Pat Forbes builds tippy towers, cantilevered blocks and layers of geometric shapes to create her series Architectural Motifs.

Geometry layered with cut paper pieces constructing resemblances of architectural forms are the signature theme of a new series of compositions by New Mexico artist Pat Forbes. She comes from other places where tall buildings loomed and urban density was the tapestry of her world. But now, here in the desert, she has abstracted those forms and intensified the colors resulting in hallucinations of those urban scenes to hang on the wall.

Whether on wood or stretched canvas as seen here, Forbes likes squares. She builds tippy towers, cantilevered blocks and layers of geometric shapes to create her series, Architectural Motifs. The contrast between the brilliant colors and fluidity of the open spaces of New Mexico and the rigid over-lapping planes and cubes of color fragmented in the urban architecture join to make her bold statement. Art is about observation and interpretation. Knowing your medium and using it to produce an idea, expression, emotion…the abstraction of an artist’s thoughts and ideas can be most intriguing. Using expressive abstraction in Interior Design brings bold color and conversation to the personality of a space.

Build IT America

We’ve heard about streets paved with gold – and this is as close as I’ve seen. In Istanbul, we encountered streets paved with what we know it as Porphyry – a granite-like stone quarried in Mexico – billed as a European paving material – we saw it all over Greece and Turkey. Like brick from the standpoint that it is durable, conceals dirt and street soil, these square chunks of non-slip stone give a mottled coloration of reds, grays and dark charcoal tones resulting in a practical, timeless and extremely attractive surface. Not only the pavers, but great tiles of honed granite for sidewalks and shown here, drain channels along the curbs. And we primarily have asphalt and concrete!!!
Milestone in Santa Fe brings tons of it in from Mexico to create luxurious driveways, patios, pathways and anything that might require, deserve and be budgeted for this style and quality of material. It’s unfortunate that the cost inhibits many (including the public municipalities) from using it. Not only the material cost (which might be better valued with more competition) but the labor to install.
This comes back to the lost art of many of the trades and the lost interest of recent generations to continue the trades of the generations that preceded them. We have to import stone masons to restore our historic churches and other edifices fabricated from and adorned with the fine craftsmanship of generations past.
Let’s get the AGC (Association of General Contractors) for example to establish, fund, and promote summer camps for kids to pursue the trades. These 2 to 12 week camps could be located all across the country, supported by the many businesses connected to the construction industry – machine, tool, cable, wire, cement, stone, brick, lumber, adhesive, steel, electric, plumbing, and other companies related to the trades. We have cut so many programs in the public school systems that it’s time for the private sector to step-up and contribute to the betterment of our labor forces. To have a leader like the AGC orchestrate a nationwide program that gathers participation from all manner of associated businesses both national companies and local concerns in each region would be a tremendous asset to our students, labor force, and economy. Whether imported workers or home-grown we need the trades – the fine craftsmanship and the sense of pride and recognition that should be instilled and go along with such good work.
The construction industry has taken a large hit with this down-turn in the economy. Yet the unions and non-union alike could and should be more vocal about constructive measures to improve the morale, growth and development of our labor scene. Not everyone is cut-out for college and the intellectual pursuits of higher education. Yet their talent and aptitude is no less important and should be encouraged and honed – and who better than the industry leaders of this great nation? BUILD IT AMERICA!

Immortal Merit of Ancient Architectural Designs

THE Acropolis venue – this might be my one and only performance!! Ta Da!! But to be in these places where so much history is embedded in the stone and where modern celebrities have entertained and received worldwide exposure – it is staggering and humbling to even stroll by and see it – imagining the many scenes and who has performed and what on this and other ancient stages – imagining actually being invited to perform there in modern times with the ghosts of the millennia echoing through the zephyrs of the site.The Acropolis
These magnificent structures challenge if not defy our understanding as to how they were constructed so many thousands of years ago. Yet it is fascinating to realize what stunning architectural design impact they left and that we have utilized and incorporated their designs through the centuries and still value and employ today. Who was that first person or team of clever thinkers to determine to put a couple of things upright and something across the top of them and create the column and beam framework for structures? Not to mention the increased weight bearing techniques and incredible adornment that followed to improve and embellish the structures. From the pyramids to the palaces, the arches and vaults, the timeless influence of their ancient building designs and decorative arts is found in not only architectural design, but the design of interior spaces and furniture design as well. It’s inspiring to stop and think about the historical importance and true immortal merit that these ancient designers contributed to our planet.
